The Ultimate Cheesecake Brookie Bars

This is definitely the way you want to start off the new year. No need to make the hard decision like what dessert to make. The ultimate cheesecake brookie bars are the answer. A brookie, in case you don’t know, is a brownie layered with chocolate chip cookie dough, then baked. This is the perfect combination of every decadent craving you could have. Creamy, tangy cheesecake, rich, fudgy brownie and chunks of chewy chocolate chip cookie all layered together. I love that you get a unique bite each time, some just brownie and cheesecake, some brownie and cookie, and of course the best are all three.

These bars are a throwback to my second job as a baker. I came up with my own version of a brookie, a new-ish concept 10 years ago. They were my favorite item to bake because they were my favorite to eat, especially during long shifts. I really like them cold so they are extra fudgy. A few nights ago I had a craving for my brookies, and then a simultaneous craving for cheesecake brownies. Then the A-HA! moment came. Why choose? Why not combine my favorites into one decadent bite? I’m so pleased it worked on the first bake, so I could happily eat my creation and satisfy those cravings.

I know three elements sounds like a lot to make, but they come together very easily. You make the brownie layer using the microwave or a single pot on the stove. While that bakes, whip up a simple cookie dough, store it in the fridge, then in the same bowl quickly blend the cheesecake layer. After the brownie layer finishes par-baking, spread the cheesecake, dot with the cookie dough, sprinkle on a few more chips and finish baking. The hardest part is waiting until everything cools down to dive in and eat!

The Ultimate Cheesecake Brookie Bars

The ultimate dessert for the indecisive! Creamy cheesecake layered with chewy chocolate chip cookies on top of the most decadent chocolate brownie. It sounds difficult, but this baby comes together in less than an hour!

Ingredients

  • Brownie Layer
  • 1 cup chocolate chips
  • 1 stick butter
  • 1 Tablespoon cocoa powder
  • 4 eggs
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • Cheesecake Layer
  • 8 oz cream cheese room temperature
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • Chocolate Chip Cookie Layer
  • 1 stick unsalted butter softened
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350F. Line a 9x13 pan with foil or parchment, and lightly spray with pan spray.
  • In a microwave safe bowl, combine the butter and chocolate chips for the brownies. Microwave for one minute, then stir. If the butter and chocolate are melted, proceed, if not continue to microwave in 20 second intervals until the chocolate is melted. Alternately, melt on the stove over low heat then proceed.
  • Add the cocoa, then whisk until no lumps remain. Add the eggs and whisk, then whisk in all ingredients except flour. Add the flour and stir until smooth.
  • Pour into the prepared pan and bake for 20 minutes.
  • Prepare the cheesecake layer by mixing together the cream cheese and sugar until smooth, 1-2 minutes. Add the egg and vanilla and combine. Set aside.
  • Make the chocolate chip cookie dough by creaming the softened butter and sugars until lightly aerated, 2-3 minutes on medium high speed. Mix in the egg until fluffy looking, then add the baking soda, salt, and vanilla, stir, then all of the flour until just combined. Finally, stir in the chocolate chips, reserving 1/4 cup to sprinkle on the top of the bars if desired.
  • To assemble, spread the cheesecake evenly over the par-cooked brownies, then drop large spoonfuls of the cookie dough on top, evenly distributing.
  • Bake an additional 20-25 minutes, until the cheesecake lightly jiggles and the cookies look lightly golden brown. Cool completely before serving, preferably refrigerating until cold and fudgy.
