The Ultimate Cheesecake Brookie Bars

The ultimate dessert for the indecisive! Creamy cheesecake layered with chewy chocolate chip cookies on top of the most decadent chocolate brownie. It sounds difficult, but this baby comes together in less than an hour!

Ingredients

  • Brownie Layer
  • 1 cup chocolate chips
  • 1 stick butter
  • 1 Tablespoon cocoa powder
  • 4 eggs
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • Cheesecake Layer
  • 8 oz cream cheese room temperature
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • Chocolate Chip Cookie Layer
  • 1 stick unsalted butter softened
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350F. Line a 9x13 pan with foil or parchment, and lightly spray with pan spray.
  • In a microwave safe bowl, combine the butter and chocolate chips for the brownies. Microwave for one minute, then stir. If the butter and chocolate are melted, proceed, if not continue to microwave in 20 second intervals until the chocolate is melted. Alternately, melt on the stove over low heat then proceed.
  • Add the cocoa, then whisk until no lumps remain. Add the eggs and whisk, then whisk in all ingredients except flour. Add the flour and stir until smooth.
  • Pour into the prepared pan and bake for 20 minutes.
  • Prepare the cheesecake layer by mixing together the cream cheese and sugar until smooth, 1-2 minutes. Add the egg and vanilla and combine. Set aside.
  • Make the chocolate chip cookie dough by creaming the softened butter and sugars until lightly aerated, 2-3 minutes on medium high speed. Mix in the egg until fluffy looking, then add the baking soda, salt, and vanilla, stir, then all of the flour until just combined. Finally, stir in the chocolate chips, reserving 1/4 cup to sprinkle on the top of the bars if desired.
  • To assemble, spread the cheesecake evenly over the par-cooked brownies, then drop large spoonfuls of the cookie dough on top, evenly distributing.
  • Bake an additional 20-25 minutes, until the cheesecake lightly jiggles and the cookies look lightly golden brown. Cool completely before serving, preferably refrigerating until cold and fudgy.
